    25% pears (common, concorde and conference)

    Fermentation in glass and stainlees steel

    Hazy, vibrant and crisp. The pears add a lifting sensation. It has 4 g of residual sugar that amplifies the fruit. But counteracted by a great acidity, the cider is in balance.

    50% Belle de Boskoop apples from Tilst, 7 days of maceration
    45% Belle de Boskoop apples from Lystrup, 3 days of maceration

    .
    Barrel aged for one year sans ouillé. Aromatic, creamy and complex yet with a good spicy acidity that derives from Belle de Boskoop.

    It's our "a little bit of everything" bottle. Apples of different varieties. Picked all over Aarhus. Literally, all over. Different days of maceration.

    Fermentation in stainlees steel.

    Tropical, juicy with a slightly reductive character, leaving notes if stones and matchsticks

    50% Belle de Boskoop from Risskov. 5 days of maceration

    30% Belle de Boskoop from Viby. 3 days of maceration

    20% Ingrid Marie from Malling. 3 days of maceration.

    .

    Drunken Monologues is a declaration of love for October. The month in which Belle de Boskoop and Ingrid Marie reach perfect ripeness. You'll find both in Drunken Monologues
    This bottle has a lot of structure. Lots of depth. Complex, salty with a good acidity.

  • ON A BENDER 2022

    50% Belle de Boskoop apples 

    50% pears of different varieties.

    .
    These trees were over a hundred years old. All apples (and pears) in this bottle are picked from the same place: An old orchard in Malling. Aged for six months on the lees. Degorged and topped up with barrel aged Belle de Boskoop from the same orchard.

    90% Summer apples, direct press

    10% Plums: Reine claude, from Risskov, and wild plums from all over Aarhus.

    Carbonic maceration

    Due to long 50 day maceration of the plums, the entire fruit is in focus, i.e. skin, pulp and pit.Fermentation in glass and stainlees steel
    For some reason, "Out Tonight?" tastes a bit like pineapple.
    Who the hell doesn't like pineapple?

  • MODERN LOVER 2022

    90% Summer apples, mainly Discovery.
    10% Blackcurrant. One half went through a carbonic maceration for a month. Other half went through a wet maceration for a month.

    The above were combined at the end, resulting in a fruity expression with a salty minerality.

  • TRAVELLED TO SPACE, FOUND THE MOON TOO SMALL 2022

    95% Belle de Boskoop from Viby, 3 days of maceration

    5% Japanese quinces from Thomas Laursen

    .

    The Japanese quinces were infused in Belle de Boskoop juice for a week in stainless steel tanks. Aged in barrels for a year, this creation might be our finest to date. It tastes like Matassa's orange wines and is incredibly irresistible.

  • DETOURS THAT AIN´T REAL 2022

    90% Belle de Boskoop from 2022. Picked in Malling. 2 days of maceration

    10% wild cherries from Moesgård Strand, picked in July 2023.

    Semi carbonic maceration for 30 days

    .

    We combined the to pieces in a barrel for 60 days and bottles it with a bit of fermenting juice from 2023.

    It has a taste similar to a light Ploussard from Jura, with lingering acidity.

    90% Belle de Boskoop

    10% Wild japanese quince

    This cider is probably the most difficult we’ve ever made. Composed of small variations and experiments with Belle de Boskoop and wild japanese quinces. it’s a kind of magic we’ll never be able to replicate.

    we get notes of peaches, orange blossoms, orange zest, green apples, lemongrass, vanilla, and sea shells.

  • I FLOATED IN YOUR SWIMMING POOLS 2023

    Made from 100% apples picked throughout the season, each with its unique maceration time.

    Our most complex base blend yet, with flavors reminiscent of a juicy German field blend, possibly with hints of Riesling and Weissburgunder.

    A no-nonsense, natural cider similar to "Certified Mind Blower" from 2022.

  • I GOT ALL DRESSED UP FOR NOTHING 2023

    95% Summer apples, direct press

    5% Aronia berries, carbonic maceration in glass for one months, then followed by a semi-carbonic maceration for 2 months.

    .

    This process captured the fruitiness from the carbonic and added acidity and structure from traditional maceration.
    What emerged is a juicy, fresh blend with hints of rhubarb, green strawberry, rosehip, red apple, and grapefruit.

    30% Belle de Boskoop from Hasle, macerated for 2 days
    20% Malling Pears (GC), macerated for 2 days

    A beautiful elegant expression of old trees in the South of Aarhus. A great balance between vibrant acidity and rich fruit.
