Our no-nonsense, natural cider similar to "Certified Mind Blower" from 2022.

Made from apples picked throughout the season, each with its unique maceration time.

Our most complex base blend yet, with flavors reminiscent of a juicy German field blend, possibly with hints of Riesling and Weissburgunder.

I GOT ALL DRESSED UP FOR NOTHING

95% Summer apples, direct press

5% Aronia berries, carbonic maceration in glass for one months, then followed by a semi-carbonic maceration for 2 months. This process captured the fruitiness from the carbonic and added acidity and structure from traditional maceration.

What emerged is a juicy, fresh blend with hints of rhubarb, green strawberry, rosehip, red apple, and grapefruit.

30% Belle de Boskoop from Hasle, macerated for 2 days

20% Malling Pears (GC), macerated for 2 days

A beautiful elegant expression of old trees in the South of Aarhus. A great balance between vibrant acidity and rich fruit.

10% Victoria plums from Harlev, which have been macerated in apple juice for 2 months

Plums, macerated for so long, give a full-bodied, rich tropical fruit flavor, light tannins, and a rounded acidity

Fermentation entirely in shiny stainless steel

DREAMING MY LIFE AWAY

This cider is probably the most difficult we’ve ever made. Composed of small variations and experiments with Belle de Boskoop, it’s a kind of magic we’ll never be able to replicate.

Aromatics from the quince and the macerated Belle de Boskoop meet the focused and clear expressions from barrel and stainless steel, resulting in a balanced, energetic blend with depth, clarity, and freshness. To preserve this focused expression, we bottled it with very little fresh juice, resulting in small, delicate bubbles.
