BOTTLE
A flowery and serious blend of Belle de Boskoop apples and wild japanese quince. We did an infusion of shredded quince for 7 days in the juice of direct press Belle de Boskoop. Then we sieved the juice and racked it into a beautiful slightly new 500L Seguin Moreau barrel, where it fermented and rested for a year without top-up. Scent of pineapple, orange zest, flowers and peaches. The taste is fresh and complex; green apples, pineapple and lime zest and earl grey. 750ml /5,7% vol

VARIETY
Belle de Boskoop— our favorite variety. Originally cultivated in Boskoop, Netherlands. Trees are robust, grow big and carry a lot of fruit. Their tough structure, make them ideal for macerations, and hard pressings. We consider it as a friend of Chardonnay in Champagne.
Wild Japanese Quince—Indigenous to Southern Japan and was introduced in Europe in 1849 as a decorative bush. They are astringent and sour, however incredibly aromatic and irresistible. Ideal for infusions.

ASSEMBLAGE
Our most approachable ciders.
They are a mix of different varieties, and sometimes we even add other fruit.
The majority of these ciders have been barrel aged in old barrels. A small part has seen shiny stainless steel tanks.
