    Bramley apples from a single, over 100-year-old tree located in the small village of True, just 10 km north of our cidery. These apples have an electric energy, depth, and complexity like no other. Harvested on the 23rd of October 2023 and pressed gently the following day. After several hours of oxidation, the juice went directly into an Ermitage 300L barrel, where fermentation and aging occurred without topping up.

    It was bottled by hand on the 12th of August 2024, straight from the barrel as a still wine. This wine has a beautiful balance between the distinct acidity of the variety, the roundness of the oak, and the salty, deep expression from oxidation and nearly a year on full lees. The result is striking; grilled lemons, oxidized apples, wet rocks, seashells, walnuts, and warm spices.

  • VARIETY

    Bramley's Seedling apple trees are large, vigorous, spreading and long-lived. They tolerate some shade. The apples are very large, two or three times the weight of a typical dessert apple. They are flat with a vivid green skin that becomes red on the side that receives direct sunlight. The tree is resistant to apple scab and mildew and does best when grown in somewhat heavy clay soil. We adore it for its acidity and good tannic structure, that gives a very energetic juice.

  • GRAND

    Our Grand ciders are among the very best ciders in the world. They origin from +100 years old single trees with truly unique locations. They are all barrel aged in slightly new oak barrels and left up topped to take on oxidation.

    Grands are only made in the best vintages when we consider the quality high enough. Even though the location is sublime, the fruit tastes exceptional and the tree is old enough; if the quality of the cider is not on the highest level we will not bottle it as a grand. These ciders are extremely limited to one barrel per cuveé.

    They offer a dive into an ocean of flavour, pushing the limits of cider. They are highly complex, generous, balanced while keeping a mineral depth and an electric energy.
