Belle de Boskoop from an old small forgotton orchard in Malling a little drive South from our cidery. All the trees are rooted on a slope, leading all the water away from the trees. This means all the nutrients and sugar has a higher concentration in the apples, resulting in an explosion of flavour and a good foundation for fermentation.

We harvested the apples a bit early on the 18th of October 2023 and pressed them two days after to bring out some structure. The juice went into three Ermitage barrels where it stayed until the 14th of August 2024 where we did an assemblage of the three barrels and bottled them as a still wine.

A wine that expresses the characteristics of Belle de Boskoop. A strong fresh acidity backed up by a generous fruit and a peppery finish. All tied together by this pleasant tension. We get ripe stone fruits, green apples, toasted bread and white pepper.
