    Belle de Boskoop apples from our Cru in Malling, just a short drive south of our cidery. We harvested the apples a bit early on the 18th of October 2023 and pressed them two days later to bring out some structure. The juice went into three Ermitage barrels, where it stayed until the 14th of August 2024, at which point we blended the three barrels and bottled it as a still wine. This wine expresses the classic characteristics of Belle de Boskoop: a strong, fresh acidity backed by generous fruit and a peppery finish. All tied together by a pleasant tension. We get notes of ripe stone fruits, green apples, toasted bread, and white pepper.

  • VARIETY

    Belle de Boskoop is our favorite variety. Originally cultivated in Boskoop, Netherlands, this variety is highly popular in Denmark. The trees are robust, grow big and carrying a lot of fruit. They are high in sugar, fragrant and have a great acidity. Their tough structure, make them ideal for macerations, and hard pressings. It yields notes of unripe tropical fruits, grilled lemons and white pepper. We consider it as a friend of Chardonnay in Champagne.

  • SINGLE

    Our single ciders are single variety and come from one of our best gardens. The trees are more than 100 years old yielding incredible fruit, that we handle with the most care and prestige we can.

    The juice of this exceptional fruit is carefully racked into some of our best barrels to ferment and rest on full lies for 12 months without any top-up. We then do tirage with some fresh juice of the following year. Slowly, they are riddled and the dégorgement is performed 6 months after tirage when small delicate bubbles have been created. They are complex, deep and express the terroir and the varieties of which the consist.

    Over the years of picking and eating apples we have started to noticing a coherence between how the apples taste and from which tree they origin. Even the same variety can taste very different depending on the tree and where that tree is rooted.

    This is far from new thoughts. It is the principle of terroir that has been widely expressed and discussed in the world of wine for centuries. The novelty is that we have started to applying it to apples.

    Our single orchard is located in the south of Aarhus consisting of around 20 trees, that stand on a slightly steep slope. They were planted in the 1920´s in clay soil mixed with stones. The varieties Belle de Boskoop and Ingrid Marie are planted here and they thrive perfectly with the light drainage and good stable temperatures the soil provides.
