BOTTLE
100% Ingrid Marie from an old little orchard in the south of Aarhus. We harvested the 100 y/o trees the 29th of September 2024 and did a one day macaration to bring out a little structure. We pressed and took only tête de cuvée; the first most elegant and delicate juices from the press. Fermented and aged 12 months in 4 y/o Ermitage barrels on fine lees. Complex notes of brioche, red apples, grilled lemons and wet stones. Amazing bubbles with such clarity. Undoubtedly the most Champagne-like cider we ever made. 750ml /5,9% vol
VARIETY
Ingrid Marie—our little red darling. A danish variety from Fyn, which is a cross between Cox Orange and Guldborg. It has a wonderful red fruited character reminding us of raspberries and red currant and fragrance like rose petals and hibiscus. It is intriguing like summer apples but intense and complex like Belle de Boskoop. It has a wonderful acidity and a solid structure, making it ideal for short macerations. For us it is the danish equivalent to Pinot Noir in Champagne.
SINGLE
Our single variety ciders are expressive, elegant and complex. We isolate our favorite varieties, to showcase their unique traits and qualities. Fermentation is carried out in 3-5 y/o very thick barrels to obtain a slight reduction and some delicate oak flavours.
