The Victoria plums were harvested on August 28th and macerated in freshly pressed apple juice. We tasted the juice every other day to follow the transformation. At first, the flavors were odd. Then they became pleasant. And after 47 days, they were irresistible. So, on October 14th—Sebastian’s birthday—we bottled it.
The result is strikingly fruity: papaya, ripe plums, orange zest, oxidized apples, and warm spices. A bright and generous drink that might just make you wonder—does papaya grow in Denmark?
