A vibrant blend of mixed apple varieties harvested from August to October 2024, from the fresh, fruity notes of early-season apples to the rich, ripe flavors of late-season harvests. A standout vintage, showcasing ideal ripening conditions, clearly reflected in the glass. Our go-to cider for any moment. Juicy and refreshing, with notes of melon, green apple, hay, elderflower, and lime zest.

VARIETY

Belle de Boskoop is our favorite variety. Originally cultivated in Boskoop, Netherlands, this variety is highly popular in Denmark. The trees are robust, grow big and carrying a lot of fruit. They are high in sugar, fragrant and have a great acidity. Their tough structure, make them ideal for macerations, and hard pressings. It yields notes of unripe tropical fruits, grilled lemons and white pepper. We consider it as a friend of Chardonnay in Champagne.

ASSEMBLAGE

Our assemblage ciders are juicy, bubbly and aromatic. They are based on foraged wild growing fruits mixed with aromatic summer apples.

When we create these ciders we focus on drinkability. They are meant to be enjoyed with your loved ones in all sorts of joyful occasions. They should make you feel cheered and happy and accompany celebrations and good times.

We therefore use early picked summer apples, providing a good freshness. Summer apples are exploding with aromatic flavours, which we try to preserve by pressing lightly and delicately.

When the other fruit is mixed with the juice of the apples we basically perceive them as tea, that we infuse in the juice of the apples. We never press the fruit, since we believe it overpowers the delicacy of the apples. When the fruit has infused for long enough we take it out and bottle the cider.
