BOTTLE

A beautiful blend of apples from the whole season in 2024, mainly consisting of Filippa. We made a direct press for a long time to bring out more texture and depth. Aged in 80% old barrels and 20% stainlees steel. The scent is fresh of ripe apples, wet stones and lemon and the flavour is rich with notes of ripe peaches, grilled lemons, and walnuts with a saline long finish.

VARIETY

Filippa—danish variety discovered around 1880 and is a seedling from Gravenstein. The tree has thin brances and drops all the fruit within a few days. We like to pick it in the first weeks of September where the acidity is strong and the texture is crisp and firm. The flavour is highly aromatic and has a good balance between fruitness and acidity. Produces very elegant juice.

ASSEMBLAGE

Our most approachable ciders.

They are a mix of different varieties, and sometimes we even add other fruit.

The majority of these ciders have been barrel aged in old barrels. A small part has seen shiny stainless steel tanks.
