BOTTLE

100% Belle de Boskoop from a single orchard in the middle of Aarhus, that we harvested the 16th of October.. The place is unique and very special and so are the trees.

We pressed and took only tête de cuvée; the first most elegant and delicate juices from the press.

Fermented and aged 12 months in 5 y/o 400L Seguin Moreau barrels on fine lees. Tirage was done in early September  2025 with a bit more sugar than usual, meaning more bubbles.

After spending almost 10 months in the bottle, we digorged it and it has become one of the best ciders we have ever made. Elegant like nothing else with complex notes of honeydew melon, sea shells and grilled lime

VARIETY

Belle de Boskoop—our favorite variety. Originally cultivated in Boskoop, Netherlands, this variety is highly popular in Denmark. The trees are robust, grow big and carrying a lot of fruit. They are high in sugar, fragrant and have a great acidity. Their tough structure, make them ideal for macerations, and hard pressings. We consider it the danish equivalent to Chardonnay in Champagne.

SINGLE

Our single variety ciders are expressive, elegant and complex. We isolate our favorite varieties, to showcase their unique traits and qualities. Fermentation is carried out in 3-5 y/o very thick barrels to obtain a slight reduction and some delicate oak flavours.
